Batata Bhungla / Spiced Garlic Potato with Fryums - Gujarathi Street Food
Batata Bhungla is Gujarati street food. This is served with peanuts and Pipe fryums. I got introduced to this because of my dear friend Reshma, who taught me this as well.
As a south Indian initially I was wondering, how this can be eaten. But after tasting it, it felt heavenly good. Take the pipe fryums, dig in the potatoes into it, and dip the peanuts. Then just bite it to feel the awesomeness. This dish is purely for people who love the flavor of garlic. I basically had it with curd rice and roti.

Ingredients:
1. Potato / Urulai - 2 Large2. Oil - 4 tablespoons
3. Kayam / Asafoetida - a pinch
4. Coriander Powder - 1/2 tablespoon
5. Salt
6. Coriander leaves
For Grinding:
1. Peanuts - 3 tablespoon
2. Garlic - 10-12 pieces
3. Ginger - 1 small piece
4. Tomato - 1 Small

5. Chilli Powder - 1 Tablespoon
6. Kashmiri Chilli Powder - 2 tablespoons

Preparation method:
1. Cut the potatoes into medium-sized pieces and fully boil it with a pinch of salt. It should not be boiled too much. I boiled the potatoes in medium flame for 15 mins.
2. Coarsely grind the peanut alone separately and keep it aside. Now grind the remaining ingredients all together in a blender with a little amount of water to a smooth paste.
Note: peanuts can be ground together with the masala as well. To get the crunchiness, it is grounded separately.
3. Heat the pan with oil and add in the asafoetida. Now add in the peanut powder and mix it well in low flame.
4. Now add in the grounded masala and mix it well in medium flame.
5. Leave it in medium flame until it leaves in oil in the pan.
6. Now add 1/2 glass of water and let it thicken in medium flame for 5 minutes.
7. Once it leaves in oil, now add coriander powder and mix it well.
8. Add the chopped coriander and boiled potatoes to the spice mixture and switch off the flame immediately.
9. Mix well and serve with fryums/ Bhungla along with peanuts.
Note: If you need it in gravy consistency, More water can be added to it.
