Roadside Kalan - Indian Street Food


Ingredients:

For Frying:

  • Cabbage - 1 1/2 cups
  • Mushroom - 1 1/2 cups (150gm)
  • Plain Flour / Maida - 1 cup (Can be replaced with 1/2 portion of wheat flour / Atta too)
  • Corn Flour - 1/4 cup
  • Turmeric Powder - 1/4 tablespoon
  • Red Chilli Powder - 1 1/2 tablespoon
  • Garam masala - 1/2 tablespoon (Optional)
  • Salt - Required amount
  • Oil - For frying

For Masala:

  • Oil - 3 tablespoons
  • Saunf - 1/2 tablespoon
  • Onion - 1 
  • Tomato - 2 
  • Ginger Garlic Paste - 1 tablespoon
  • Turmeric Powder - 1/4 tablespoon
  • Kashmiri Red Chilli Powder - 1/2 tablespoon (Normal Chilli Powder can be used as well)
  • Corn Flour - 3 tablespoons
  • Salt - Required amount
  • Coriander leaves 
  • Spring onions (Optional)


Preparation Method

1. Wash cabbage and mushrooms thoroughly and chop them into small pieces.

2. Now mix all the ingredients given under for frying except the oil and smash them completely with hands.


3. Moisture from the mushroom is enough to smash the mix completely. If not enough moisture water can be added to smash it to a batter. This can be instantly used.

4. Heat oil in a pan and fry the small pakoda's in medium flame until they are crispy. Keep it aside.

5. Now for masala, heat oil in a pan and add the saunf once it is heated. Add the finely chopped o
nion, ginger garlic paste and mix them well.


6. Add the finely chopped tomato, turmeric powder, red chilli powder and salt to the pan. Mix them well continuously until they are smashed.


7. Mix cornflour with 1 glass of water and dissolve it completely.

8. Add in the cornflour paste to the pan and mix them well in low flame.

9. Pour in the fried pakoda's to the masala and mix them well in low flame for a minute.



10. Switch off the flame and garnish the Roadside Kalan masala with finely chopped onions & coriander leaves.

This can be served hot with a lemon slice & Spring onions as well. It tastes well with a cup of masala chai.
