Groundnut Brinjal Curry

Ingredients:

For Grinding & Stuffing:

1. Roasted Ground Nuts - 20gms 
2. Green chilli - 1 big
3. Onion - 1 big
4. Coconut
5. Ginger garlic paste

For curry:

1. Brinjals
2. Tamarind - 1 small ball
3. Red Chilli Powder - 2 tablespoon
4. Coriander Powder - 1 tablespoon
5. Garam Masala Powder - 1/4 tablespoon
6. Turmeric Powder - 1/4 tablespoon
7. Salt

For Tempering:

1. Oil
2. Bengal Gram / Kadala parupu
3. Curry Leaves

Preparation method:

1. Soak the tamarind in water for few mins and extract the pulp.

2. Grind the ingredients provided for grinding with little water to paste consistency.


3. Add Red Chilli Powder, Coriander Powder, Garam Masala Powder, Turmeric Powder, and salt to the grounded paste and mix it well.


4. Slit the brinjals and stuff the masala prepared inside of it.

5. Mix the remaining masalas with the tamarind pulp extracted and keep it aside.


6. In a cooker add some oil and heat it. Add Curry leaves and Bengal Gram / Kadala parupu.

7. Once Bengal Gram / Kadala parupu is fried, add in the stuffed brinjals and fry in low flame for 2 mins.

8. Once it is fried, add the remaining masala mixed with tamarind pulp inside the cooker and mix it well.

9. Check for Salt in the masala and close the lid.

10. Close the lid and keep for 2 whistles.

This dish goes well with Jeera rice, Roti, Briyani, and Variety Rice as well. This can be mixed with white rice as well... This is one of the best Keto-approved recipes as well.
